🌿 Filipino Laing na Dahon ng Sili (Dried Pepper Leaves in Coconut Milk)
Ingredients:

1 cup dried pepper leaves (dahon ng sili)

1 cup coconut milk (first extract if possible)

1 small onion, chopped

3 cloves garlic, minced

1 small piece ginger, sliced thinly

1–2 bird’s eye chilies (optional, for heat)

1 tbsp shrimp paste or ½ tsp salt (to taste)

1 tsp oil
Instructions:

Soak the dried leaves in warm water for about 10–15 minutes to soften. Drain well.

In a pan, heat the oil and sauté onion, garlic, and ginger until fragrant.

Add the shrimp paste (or salt) and stir for a minute.

Pour in the coconut milk and bring to a gentle simmer.

Add the pepper leaves and chilies. Simmer uncovered for 10–15 minutes on low heat until the sauce thickens slightly.

Adjust seasoning. Serve with steamed rice.
