🌿 Filipino Laing na Dahon ng Sili (Dried Pepper Leaves in Coconut Milk)

Ingredients:

  • 1 cup dried pepper leaves (dahon ng sili)

  • 1 cup coconut milk (first extract if possible)

  • 1 small onion, chopped

  • 3 cloves garlic, minced

  • 1 small piece ginger, sliced thinly

  • 1–2 bird’s eye chilies (optional, for heat)

  • 1 tbsp shrimp paste or ½ tsp salt (to taste)

  • 1 tsp oil

Instructions:

  1. Soak the dried leaves in warm water for about 10–15 minutes to soften. Drain well.

  2. In a pan, heat the oil and sauté onion, garlic, and ginger until fragrant.

  3. Add the shrimp paste (or salt) and stir for a minute.

  4. Pour in the coconut milk and bring to a gentle simmer.

  5. Add the pepper leaves and chilies. Simmer uncovered for 10–15 minutes on low heat until the sauce thickens slightly.

  6. Adjust seasoning. Serve with steamed rice.
